Induction Cooking Technology - How Induction Works
Induction cooking technology is a technology whereby cookware is heated using magnetic energy.
The induction coil is installed underneath a smooth ceramic panel and is energised by a frequency converter that converts mains power into a higher-frequecy alternating field.
How Induction Works:

This generates an eletromagnetic alternating field that penetrates the ceramic panel and induces a heat generating eddy current into the bottom of the cookware.
The ceramic panel itself stays cool. The ceramic panel is only heated indirectly by the heat reflected from the pan bottom.
When the cookware is removed from the induction hob the cooking zone automatically switches off. Empty pans and pans that are boiling dry are detected by a temperature sensor that switches off the induction cooking zone.
All cooking zones can be operated at normal rating independent of each other.
